Spaetzle (Homemade pasta noodles)
These homestyle noodles are easy to prepare, are very moist and
fun to make. They cook quickly in boiling water and all you need
is a chopping board and the back of a long knife to form lots of
noodles. Can be made hours or the day before.
4 servings:
1 1/4 cup sifted plain flour
1 large egg (at room temperature)
3/4 cup luke warm water
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
optional 1 drop of yellow food colouring
80g butter (cut into small cubes)
300g Emmenthal cheese, grated
1/2 sliced spanish onion
5 mushrooms, sliced
Bring egg to room temperature.
Sift flour into a large bowl.
Add lightly beaten egg, nutmeg, salt and food colouring.
With a wooden spoon gently stir ingredients together.
Add water gradually to form a thick batter.
Allow to stand for a few minutes.
Bring a large pot of water to the boil. Depending on the amount
of mixture, you may need to make the noodles in several batches.
Wet the surface of a large chopping board with cold water.
Spoon a small portion of the pasta batter to thinly cover the wet
chopping board. Using the back of a wet knife or long wet spatula
scrape long thin strips of the batter off into the boiling water.
Repeat until you have scraped all the batter off the board. Run
the knife or spatula under water to keep it wet in between scrapes.
Allow the noodles to cook for approx 2 minutes. The noodles will
be cooked when they float to the top. Scoop out with a large spoon
and place in a strainer and allow to drain.
Repeat the same process with the remaining mixture.
Rinse the pasta with some hot water shortly before serving and
drain. While the noodles are still warm gently stir in the small
cubes of butter and allow the butter to melt. Place in serving bowl.
At the raclette grill:
Place noodles in one raclette pan and allow to re-heat.
Place some slices of onions and mushrooms in another raclette pan
and emmenthal cheese and allow to melt. When cheese has melted pour
over the warm noodles.
